I posted this photo on instagram a couple of weeks a go but thought I would share it on here too as it was so yummy.
1 vegetable stock
1/2 cup of quinoa
1 tin of black eyed beans
sliced jalapeños to taste
2 tsps minced garlic
1 small tin of sweetcorn
Cook the quinoa using your water preference on the ratio (i use the same as rice 1:2) with the vegetable stock. While the quinoa is cooking add a little oil to a frying pan and lightly fry the black eyed beans, sweet corn and minced garlic adding in the jalapeños fry until quinoa is cooked (roughly 10 mins) and mix and serve adding the halloumi.
This does about two servings and it tastes just as good cold as it does warm.
